Espresso Tiramisu

Coffee-dipped ladyfingers layered with whipped mascarpone cream and dusted with cocoa. Make it the day before; it needs 4 hours in the fridge to set.

Mascarpone splits if it is beaten hard or beaten into cold whipped cream, so stir it smooth on its own first and fold the cream in gently. Keep the dip to 1 second per side: ladyfingers soak up espresso fast, and a longer dip gives a wet base. Dip and lay them layer by layer so none sit soaking while you build. If you have no espresso machine, brew coffee at double strength for the dip. Dust the cocoa just before serving so it stays dry on top of the cream.
