Pickled Red Onions

Red onions softened in a hot brine of red wine vinegar, sugar and salt. They need a 30-minute stand, so make them before you start the tacos or salad.

Slice the onions as thinly as you can: thin slices soften during the 30-minute stand, thick ones stay raw in the middle. Red wine vinegar gives the deepest pink; rice vinegar works too and tastes milder. For a warmer flavor, drop a halved garlic clove or a bay leaf into the jar before the brine goes in. The leftover brine can be reheated and poured over a second sliced onion.
