Baked Vegetable Samosas
Pastry cones filled with spiced potatoes and peas, baked instead of fried. Serve them hot with chutney; leftovers crisp up again in a dry skillet.
The dough is the part to get right. It should be firm and smooth, not sticky, and the rest lets you roll it thin without tearing. The oil rubbed into the flour is what gives a baked shell its flake, so do not cut it. Cook the filling until it is dry enough to hold its shape; a wet filling softens the pastry from the inside. Both the dough and the filling can be made ahead and shaped just before baking.

Cool completely and refrigerate in an airtight container. To freeze, lay the baked samosas on a tray until solid, then bag them. Reheat from the fridge in a dry skillet over medium heat, turning, until hot and crisp; reheat from frozen on a baking sheet in a 180°C (160°C convection) oven, without thawing, until hot through and crisp.
