Blueberry Muffins

Buttermilk muffins with whole blueberries and a crunchy sugar top. Toss the berries in a spoonful of the flour so they do not sink.

Buttermilk keeps the crumb soft and gives the baking soda something to react with, so do not swap in plain milk without adding 1 tbsp of lemon juice. The batter is thick on purpose: a thin batter lets the berries sink. Fold only until the last streak of flour disappears; more mixing makes tough, tunneled muffins. The first 5 minutes at high heat set the edges and push the tops into a dome. Frozen blueberries work, used straight from the freezer and still tossed in flour, though they tint the batter purple where they burst.
