Caprese Ciabatta

Ciabatta rolls filled with fresh mozzarella, tomato and basil, dressed with olive oil and flaky salt. Pat the mozzarella dry so the bread stays crisp.

Use mozzarella packed in water and drain it well before slicing; the slices hold enough liquid to soften the bread within minutes. Tomatoes at room temperature have more flavor than cold ones. If you need to carry the sandwich, pack the rolls and the fillings separately and assemble it where you eat.
