Golden Turmeric Milk

Whole milk warmed with turmeric, fresh ginger, cinnamon and black pepper, then sweetened with honey. Keep it below a boil so the milk stays smooth.

Black pepper is traditional in haldi doodh and rounds out the earthy taste of turmeric, so do not leave it out. Fresh ginger root gives a cleaner flavor than ground ginger, and straining at the end removes the slices along with any grit from the turmeric. Milk scorches fast in a thin pan, so use a heavy saucepan and keep the heat at medium-low. For a dairy-free mug, swap the whole milk for oat milk; it warms without splitting and takes the spices well.
