Green Ginger Apple Smoothie

Granny Smith apple, spinach, cucumber and ginger root blended with lime juice and cold water. Drink it right away, as it separates if it stands.

Chop the apple and cucumber into small pieces so a standard blender gets the drink smooth; a high-speed blender takes them in larger chunks. The ginger root is a small amount but it comes through clearly, so use half for a milder drink. There is no added sugar; the apple carries all the sweetness, and a tart Granny Smith keeps the drink from tasting flat. Use cold water and chilled cucumber so it is cold without ice, which would thin it.
