Lemon Herb Couscous

Couscous soaked in boiling salted water, then tossed with parsley, mint, lemon, and olive oil. Serve it warm or cold.

The couscous only needs boiling water and a lid, so it is done in the time it takes to chop the herbs. Keep the lid on while it stands; lifting it lets the steam out and leaves the grains hard in the center. Chop the parsley and mint fine so they spread through the grains instead of sitting in clumps. It is as good cold as warm, so it suits a packed lunch or a plate beside grilled fish or lamb.
