Maple Thyme Roasted Root Vegetables

Carrots, parsnips, beets and rutabaga roasted hot with thyme, then glazed with maple syrup at the end. Serve with roast chicken or pork.

The maple syrup goes on once the vegetables have browned, not at the start, where it burns before the rutabaga is tender. Cut the beets a little smaller than the rest, since they take longest, and keep them at one end of the pan so their color does not bleed onto the parsnips. Any mix of root vegetables works at the same total weight; sweet potatoes and turnips are good swaps.
