Mediterranean Cheese and Olive Plate

Feta, provolone, kalamata olives and walnuts on a board, finished with olive oil and dried oregano. Serve with bread or crackers.

Cold feta tastes mostly of salt, so let both cheeses stand out of the fridge before you serve. Brined feta needs patting dry, or the oil slides off. Keep the olive oil and oregano to the feta and olives; the provolone and walnuts are better dry. Pitted olives are easier to eat by hand than whole ones. Many feta and provolone cheeses use animal rennet, so check the label.
