Chunky Guacamole and Chips

Roughly mashed avocado folded with lime juice, white onion, jalapeño and coriander leaf. Make it just before serving; the avocado browns as it stands.

Use avocados that give slightly when pressed at the stem end; hard ones will not mash and overripe ones turn to paste. Fresh lime juice matters here: bottled tastes flat, and the acid is what slows the browning. Keep the jalapeño seeds in if you want more heat. If the chips must be gluten-free, check that the bag says corn and gluten-free, since some brands add wheat flour.
