Peanut Butter Energy Balls

Rolled oats, creamy peanut butter and honey pressed into 12 bites, with no oven needed. Chill them for 30 minutes so they hold their shape.

Use a no-stir creamy peanut butter: a natural one that separates makes the dough crumbly and the balls fall apart. If the dough is too dry to hold together, work in another spoonful of honey; if it sticks to your hands, chill the bowl for 10 minutes before rolling. Weigh the honey rather than measuring it by spoon, since the amount is what keeps the balls bound. They are firmest straight from the refrigerator and soften at room temperature.
