Smashed Avocado Rye Toast

Avocado mashed with lemon juice and olive oil, spread on crisp rye toast with chili flakes on top. Toast the bread last so it is warm when you top it.

A ripe avocado gives slightly under thumb pressure; a hard one will not mash and an overripe one turns to paste. Keep the mash coarse so it holds some texture on the toast. The lemon juice brightens the avocado and slows browning, but make the mash while the bread toasts rather than ahead. Dense rye bread carries the weight of the avocado without going soft.
