Smoked Salmon Bagel

Cream cheese, smoked salmon, red onion and capers on a toasted bagel, finished with lemon juice. Spread the cream cheese while the bagel is still warm.

A plain or everything bagel lets the salmon lead; a sweet one fights it. Take the cream cheese out of the fridge before you start, because cold cream cheese tears warm bread. Slice the red onions very thin, or soak them in cold water for a few minutes if you want them milder. If the capers are packed in salt, rinse them before draining. Everything is salty, so the only seasoning the bagel needs is the black pepper and the lemon juice.
