Salted Steamed Edamame

Whole soybean pods steamed for 5 minutes and tossed with flaky salt while warm so it sticks. Squeeze the beans out with your teeth and leave the pods.

Buy about 300 g of edamame in their pods to get 150 g of beans. Frozen pods work as well as fresh and need no thawing: steam them straight from the bag and give them an extra minute. Flaky salt is used because the flakes cling to the damp pods; fine salt dissolves and tastes sharper, so use less of it. Only the beans are eaten, so the pods go in a second bowl at the table.
