Sesame Ginger Green Beans

Green beans boiled for 3 minutes and tossed hot in sesame oil, tamari, ginger, and garlic. Make the dressing first, so the drained beans go straight in.

Three minutes in boiling water keeps the beans bright and crisp; longer and they turn soft and gray. Toss them with the dressing while hot, so they take on the tamari and sesame oil. Use toasted sesame oil, not the pale kind, which has little flavor. Tamari keeps the dish gluten-free; soy sauce works too if that does not matter.
