Smashed Cucumber Salad

Smashed cucumbers dressed in tamari, rice vinegar, sesame oil, garlic and chili flakes. Toss them just before serving so they stay crisp.

Smashing the cucumbers opens the flesh so the dressing soaks in instead of sliding off the skin. Salting draws out water, which keeps the salad from going thin once dressed; pat the pieces dry well before they meet the dressing. Use thin-skinned cucumbers with small seeds, and peel thick-skinned ones in strips first. The salt is mostly patted away, so the finished dish tastes seasoned rather than salty. It goes with steamed rice and tofu, dumplings or grilled pork.
