Smoked Salmon and Avocado Salad

Hot-smoked salmon flaked over watercress, avocado and cucumber ribbons, with capers, dill and a lemon dressing. Dress it just before serving.

Hot-smoked salmon is cooked through in the smoker and breaks into flakes; cold-smoked salmon comes in thin slices and will not flake, so check the pack. The salmon and capers are already salty, which is why the dressing takes only a pinch of salt. Slice the avocado last: cut earlier, it browns while you shave the cucumber.
