Tuna and Butter Bean Salad

Canned tuna and butter beans tossed with red onions softened in lemon juice, capers and parsley. Eat it with bread, or pack it for lunch.

Tuna packed in olive oil gives a richer salad than tuna in water; drain it well either way, or the dressing turns thin. Rinse the beans well, or the starchy canning liquid clouds the dressing. Toss with a light hand: butter beans break up easily and turn to paste. The salad holds its texture, so you can make it in the morning and pack it for lunch.
