Sweet Potato and Bacon Hash

Diced sweet potatoes fry in rendered bacon fat until browned and tender, then toss with shredded kale. Keep the dice small so it cooks through in one pan.

Cut the sweet potatoes into 1 cm dice so the centers turn tender in the time the edges take to brown. If the bacon is lean and leaves little fat in the pan, add 1 tbsp of vegetable oil before the sweet potatoes go in. The hash is a meal on its own; a fried egg on each plate turns it into a bigger breakfast.
