Watermelon Feta Mint Salad

Watermelon, red onion and mint dressed with lime juice and olive oil, topped with crumbled feta. Chill the melon and dress it at the last moment.

Salt pulls juice out of watermelon within minutes, so dress and season the salad right before it goes to the table, not ahead. Slice the onion paper-thin; a short soak in cold water, drained and patted dry, takes the edge off if you find raw onion sharp. A block of feta crumbled by hand holds its shape better than the pre-crumbled kind.
