Roast Squash Lentil Salad

Roasted butternut squash and lentils in a mustard vinaigrette with arugula, feta and toasted pumpkin seeds. For lunches, pack the arugula separately.

Use green or brown lentils: they hold their shape through a 20-minute simmer, while red lentils break down into a puree and the salad fails. Dress the lentils while they are still warm so they take up the vinaigrette. Give the squash cubes space on the baking sheet, with none touching; crowded cubes steam instead of browning. The arugula softens a little against the warm lentils; for lunches, keep it separate until you eat.
