Baked Ziti

Ziti folded through ricotta and marinara, topped with mozzarella and baked until bubbling. Drain the ziti while firm so it holds its shape in the oven.

The pasta finishes cooking in the oven, so drain it while it is still firm in the center; fully cooked ziti turns soft after baking. The egg sets the ricotta so the layers hold together when cut. A 23 x 33 cm dish gives a layer shallow enough to heat through and brown in 25 minutes; a smaller, deeper dish needs longer and will not crisp on top. The dish can be assembled ahead, covered and chilled. Let it stand while the oven heats, then bake it covered with foil for 20 minutes and uncovered for 25 minutes, until hot in the center.
