Sheet-Pan Lemon Chicken

Chicken thighs roasted skin side up over potatoes, lemon slices, olives and garlic on one baking sheet. Rub the skin with oil and salt so it crisps.

The seasoning is split in two: half goes on the potatoes and olives, half is rubbed onto the chicken after it is patted dry, so the skin browns and the meat is salted through. Keep the potatoes in one layer; if they overlap they steam instead of browning, so use a second sheet. The lemon slices soften and char at the edges and are good to eat with the chicken. Bone-in thighs take about 45 minutes; check the thickest part with a thermometer before you pull the pan.
