Chicken Teriyaki Rice Bowls

Chicken thighs seared and glazed in a soy, honey and rice vinegar sauce made in the skillet, served over short grain rice with steamed bok choy.

Thighs stay juicy under the glaze where breast dries out. Honey gives the sauce its gloss and rice vinegar rounds the salt of the soy sauce, so the glaze tastes balanced rather than flat. Brown the chicken well before the sauce goes in, because it will not color once it is wet. The sauce reduces fast: take the skillet off the heat as soon as it coats the chicken, since it keeps thickening as it cools. Start the rice first so it finishes and rests while the chicken cooks.
