Crispy Tofu and Broccoli Stir-Fry

Cornstarch-coated tofu fried until crisp, then tossed with broccoli in a garlic, ginger and soy glaze. Press the tofu while you cut the vegetables.

Cornstarch is what makes the tofu crisp: a thin, dry coating fries to a shell that holds up once the sauce goes on. Give the cubes room in the skillet and leave them alone between turns, or the coating pulls off and sticks to the pan. A teaspoon of cornstarch in the sauce makes it cling in the last minute, so the tofu stays crisp under the glaze. Steamed rice or rice vermicelli turns it into a full plate.
