Cinnamon Pain Perdu

Day-old brioche soaks in a cinnamon and vanilla custard, then fries in butter until crisp. Serve it with fresh berries and maple syrup.

Fresh brioche turns to mush in custard, so use a loaf that has sat out for a day and cut it about 2 cm thick. Keep the soak short: 1 minute a side is enough for a slice that is wet on the surface but still holds its shape. Before plating, press the center with a fingertip; it should spring back, not sink. If the butter browns too fast, drop the heat to medium-low.
