Smoked Haddock Kedgeree

Smoked haddock poached in milk, folded into curry-spiced basmati and topped with hard-boiled eggs. The rice cooks in the poaching milk, so keep it.

Smoked haddock carries plenty of salt, and much of it passes into the milk the rice then cooks in, which is why the salt goes in last and only if the rice needs it. Undyed haddock gives a cleaner flavor than the bright yellow kind, but both work. Rinse the basmati until the water runs clear so the grains stay separate. Start the eggs before the fish, and peel them while the rice cooks.
