French Onion Soup

Onions cooked slowly in butter, simmered in white wine and stock under toasted baguette and melted Swiss cheese. Give the onions the full 50 minutes.

The onions are the whole dish: 1 kg cooks down to a fraction of its volume, and only low heat and patience turn it deep brown without burning. If the bottom of the pot darkens faster than the onions, add a spoonful of water and scrape it in. Swiss cheese stands in for Gruyère, the classic choice. Many Swiss cheeses and most Gruyère use animal rennet, so buy one labeled vegetarian. The soup can be made ahead to the end of the simmer and reheated before the bread and cheese go on.
