Greek Lamb Souvlaki Skewers

Diced lamb leg marinated in garlic, lemon, and oregano, charred on skewers with a tomato, cucumber, and red onion salad. Start 2 hours ahead to marinate.

Lamb leg is lean, so it chars fast over high heat and dries out if it goes much past medium. Cut the cubes to the same size and pack them tightly on the skewers so the outside chars before the center overcooks. Let the marinade drip off before grilling: oil on a smoking-hot pan flares, and wet meat steams instead of browning. The salad improves while the dressing sits on it, so toss it before you heat the pan.
