Greek Chicken Quinoa Bowls

Lemon and oregano chicken thighs over quinoa with cucumber, tomatoes, olives and feta, packed for 4 lunches. Add the dill dressing when you eat.

Thighs stay juicy when eaten cold, where breast turns dry and stringy, so they are the cut to use here. Cook the quinoa with the lid on and let it rest off the heat before fluffing, or it packs wet and clumps in the container. Keep the dressing apart so the quinoa stays loose and the cucumber crisp. For less salt, use half the feta or leave out the remaining salt in the dressing.
