Lamb Kofta Bake

Ground lamb koftas with cumin and cinnamon, baked in crushed tomatoes and finished with a lemon tahini sauce. Serve with warm pita bread.

Grating the onion instead of chopping it keeps the koftas moist and holds them together without egg or breadcrumbs. Mix the lamb only until the spices are evenly spread; overworking makes the koftas dense. The tahini sauce thickens when the lemon juice goes in, so keep whisking and add a little more water until it pours. The bake also works over rice or bulgur wheat instead of pita bread.

Cool the koftas in their sauce, then refrigerate in a covered container. Freeze the koftas and sauce without the tahini sauce. Thaw in the fridge, then reheat in a covered dish in the oven or in a skillet until hot through. Make the tahini sauce fresh and warm the pita bread just before serving.
