Seared Tuna Nicoise

Tuna steaks seared rare with potatoes, green beans, boiled eggs, and olives in a lemon and Dijon dressing. Sear the tuna last so it is warm on the plate.

The center of the tuna stays raw, so buy thick steaks sold for eating raw, about 3 cm thick, and pat them dry before they go into the pan. A thinner steak cooks through in the same 2 minutes. Cook the potatoes, eggs and green beans first; they can sit while you make the dressing and sear the fish, so nothing waits on the plate.
