Salmon with Lemon Spinach Orzo

Crisp-skinned salmon over orzo simmered in stock and finished with baby spinach, lemon and parmesan. Start the salmon once the orzo is covered.

The orzo cooks in stock rather than water, so there is nothing to drain and it takes on more flavor. Keep the heat at medium-low once the pot is covered, or the bottom catches before the top is tender. Pat the salmon dry and leave it alone on the skin side: moving it early tears the skin. If your fillets are thicker than 3 cm, give them an extra minute skin side down. Use vegetable stock if that is what you have on hand.
