Masala Onion Omelet

Turmeric eggs whisked with red onion, tomato, and green chili, cooked until golden underneath, then folded. Serve it hot, with a lime wedge on the side.

A thin omelet with the onion, tomato, and chili whisked raw into the eggs, in the style of an Indian roadside breakfast. Skipping a separate fry keeps the onion sharp and the tomato with some bite. A 20 cm nonstick skillet gives the right thickness for 3 eggs; a wider pan makes it too thin to fold without tearing. Swap the green chili for a pinch of chili flakes for less heat.
