Spiced Harissa Paste

Broiled red bell peppers blended with soaked chili flakes, toasted caraway and garlic into a paste. Spoon it over grains, braises or grilled vegetables.

Harissa is Tunisian, and toasted caraway is what marks this version. Soaking the chili flakes before blending matters: dry flakes stay as hard seed and skin and the paste comes out gritty. To skip the broiling, use 150 g jarred roasted peppers, drained and patted dry. The film of oil poured over the top keeps air off the paste in the jar. Keep the jar refrigerated, since garlic under oil is not safe at room temperature.
