Thai Green Shrimp Curry

Shrimp, eggplant and green beans in coconut milk and green curry paste, with jasmine rice. Fry the paste in the coconut cream until the oil splits.

Do not shake the can of coconut milk: the thick cream on top is what fries the paste, and that step gives the sauce its depth, so keep it on the heat until the oil shows at the edges. Green curry pastes vary in heat and salt, so taste the sauce before the shrimp go in and adjust with fish sauce or sugar. Thai basil keeps its anise flavor in the hot curry; sweet basil works, but add it off the heat or it turns dark.
