Thai Basil Chicken with Rice

Ground chicken stir-fried with garlic, chili, fish sauce and basil, over rice with a crisp fried egg. Chop everything before the pan goes on.

Holy basil is the leaf this dish is named for; Thai basil is easier to find and works well, but Italian basil turns it into a different dish. Ground chicken cooks fast and takes the sauce well, so have the garlic, chilies, basil and sauce ready before the skillet heats: the stir-fry is done in under 10 minutes. The egg is fried in more oil than you might expect, which is what gives it crisp, lacy edges. For less heat, use 1 chili; for the full version, use 5.
