Wild Mushroom Risotto

Arborio rice cooked in porcini soaking liquid and stock, with browned crimini mushrooms. Beat in cold butter and cheese with the heat off to keep it loose.

The porcini soaking liquid carries most of the mushroom flavor, so strain it well and use it as part of the stock. Keep the stock at a gentle simmer beside the risotto; cold stock stalls the cooking and makes the rice gluey. Taste a grain after 15 minutes of adding stock: the rice is done when it is tender with a slight bite at the center. If the stock runs out before the rice is tender, add hot water a ladle at a time. Take the pan off the burner before adding the butter and cheese; on the heat they split instead of melting into a sauce.
