Spaghetti alle Vongole

Clams steamed open in white wine, garlic and chili, then tossed with spaghetti and a splash of pasta water. Soak the clams for 30 minutes before you start.

Buy about 1 kg of clams in the shell; that gives the 200 g of meat in the list. Choose clams that are closed, or close when tapped, and keep them cold and uncovered until you cook. The soak lets them spit out their sand; skip it and the sauce is gritty. Pull the spaghetti early, since it finishes cooking in the clam juices, and lift it out with tongs rather than draining it: the starchy pasta water left in the pot is what turns the oil into a sauce. Taste before you salt: the clams and the pasta water already carry plenty.
