Beef Bourguignon
Beef chuck, smoked bacon, shallots and mushrooms braised in red wine and stock until the meat pulls apart. Reduce the sauce until it coats a spoon.
Cut the chuck into 4 cm pieces; smaller pieces dry out before they turn tender. Brown the beef in batches so it colors instead of steaming, and leave the browned bits in the pot for the wine to lift. Use a dry red you would drink; a harsh one gets harsher as it reduces. The sauce stays thin under the lid, so reducing it at the end is what gives the stew its body. This stew reheats well and suits making ahead. Serve with mashed potatoes or egg noodles.
