Beef and Broccoli Noodles

Seared sirloin, broccoli and egg noodles tossed in a soy and oyster sauce glaze. Coat the steak in cornstarch first so the sauce clings.

Slice the steak across the grain and as thin as you can; it cooks in 2 minutes, and thin slices stay tender. Have the noodles cooked, the sauce mixed and the broccoli cut before the wok goes on the heat, because the stir-fry moves fast. Sear the steak in a single layer so it browns instead of steaming. A wide skillet works if you do not have a wok.
