Bacon Kimchi Fried Rice

Cold rice stir-fried in bacon fat with kimchi and gochujang, topped with a crisp fried egg. Cook the rice the night before; it needs 8 hours to chill.

Rice that has dried out in the fridge fries into separate grains; rice straight from the pan steams and clumps, so the chill is not optional. Older, sour kimchi gives more flavor than a fresh jar, and its juice loosens the gochujang into a sauce. The bacon fat does the work of the cooking oil, so nothing else goes in the wok. If you want firm yolks, cover the skillet for the last minute of frying.
