Black Bean Sweet Potato Enchiladas

Corn tortillas filled with roasted sweet potato and black beans, baked under cumin-chili tomato sauce and cheddar. Warm the tortillas first or they crack.

Corn tortillas crack if you roll them cold, so warm each one in a dry skillet until it bends. Mash the filling only a little: whole beans and chunks of sweet potato give the rolls some bite. Grate the cheddar coarsely so it melts in patches rather than one flat sheet. The sauce is thin on purpose; it soaks into the tortillas as they bake.
