Chicken Fajitas

Chicken breast, peppers and onions seared in a skillet with cumin, chili powder and lime. Cook the chicken in 2 batches so it browns, not steams.

Fajitas need a hot, uncrowded skillet. Cook the vegetables first and the chicken in 2 batches, so each strip browns instead of steaming in its own juice. Pat the chicken dry before it goes in and cut the strips the same thickness, about 1 cm, so they finish together. Add the lime juice off the heat at the end; added earlier it stews the meat and dulls the char. Chicken thighs work in place of breast and forgive an extra minute in the pan.
