Korean BBQ Beef Wrap

Thinly sliced flank steak seared in a gochujang marinade, rolled in a warm tortilla with rice and kimchi. Sear in batches so the beef browns.

Flank steak sliced thinly across the grain cooks in minutes and stays tender. Gochujang carries sugar, so the skillet needs to be hot and the beef in a single layer: crowded slices steam and the marinade turns pale instead of charred. Any cooked white rice works here, including leftover rice reheated until steaming. Chop the kimchi so it spreads through the wrap rather than bunching in one bite.
