Soft Scrambled Eggs with Chives

Eggs stirred slowly over low heat into soft curds, finished off the heat with creme fraiche and chives. Pull the pan off while they still look wet.

Low heat and constant stirring give small, soft curds instead of large dry ones. If the pan starts to hiss, lift it off the heat for a few seconds and keep stirring. The eggs keep cooking after they leave the pan, so stop while they still look wet and let the creme fraiche cool them down. Because the curds are served this soft, pasteurized eggs are the safe choice for anyone at risk.
