Freezer Breakfast Burritos

Scrambled eggs, crisp potatoes, black beans and cheddar rolled in flour tortillas and wrapped one by one for the freezer. Reheat one from frozen.

Cool the filling before you roll, or steam softens the tortillas and they tear in the freezer. Dice the potatoes small, about 1 cm, so they fry crisp and cook through in one pan. Cook the eggs only until set, as they heat again when you reheat the burrito. Keep salsa and sour cream out of the filling, which turns watery when thawed, and add them at the table. Swap the cheddar for monterey jack, or the black beans for pinto beans, without changing anything else.

Freeze the wrapped burritos in a single layer until solid, then move them to a freezer bag. For the next mornings, skip the freezer and keep some wrapped burritos in the fridge instead. To reheat from frozen, take off the foil, wrap the burrito in a damp paper towel and microwave until hot in the center, turning it over halfway. For a crisp tortilla, finish it in a dry skillet over medium heat until browned on both sides. Burritos from the fridge reheat the same way in less time.
