Coconut Curry Mussels

Mussels steamed in coconut milk with lemongrass, ginger and green chili. Serve with rice or bread to soak up the broth.

Live mussels should smell of the sea and close when tapped; discard any that stay open before cooking. The curry powder goes in after the garlic and ginger and toasts in the oil for 1 minute before the coconut milk, which keeps it from tasting raw. Use a pot wide enough for the mussels to sit in a shallow layer, so they open evenly, and do not wait for every shell: a few always stay shut.
