Chana Masala with Basmati

Chickpeas in a spiced onion and tomato sauce, simmered until it clings and finished with lemon. Start the rice first so both finish together.

Canned chickpeas keep this to about 30 minutes from start to plate. Crushing a few against the side of the skillet while the sauce simmers releases their starch and thickens the sauce without any flour. The garam masala goes in with the other spices so it cooks into the onion base; if you want it sharper, add a pinch more with the lemon juice. The rice takes 12 minutes and then sits covered off the heat, so it is ready the moment the chickpeas are.
